... Chocolate Dinners

Prompted by Ashleigh's post and Libby's encouage- ment, last night I hosted a Chocolate Dinner. Sounds interesting huh? You are wondering how you throw a chocolate dinner. Well, you start by inviting three friends and asking each of them to bring a friend. These are your taste testers. Then you make a full on dinner with chocolate as the secret ingredient. The only overtly chocolate item on the menu was a mousse for dessert. Other than that, the menu was fairly normal; chicken, rice, corn, salsa, etc. BUT, there was chocolate hidden in each bite. It was actually a lot of fun... The food turned out well, the discussion was quite varied (I think we may have solved all the worlds problems last night), and the guest were entertaining: 2 doctors, 2 actors, and 2 producers. Overall it was an enjoyable evening.

Chocolate Chicken Recipe:

1 tbs ground cinnamon
1 tbs chili powder
1 tbs brown sugar
1 tsp cocoa powder
1/2 tsp salt
3 tbs olive oil
1 tbs balsamic vinegar
chicken

Lime Butter:
1/2 cup butter, melted
1 tbs fresh lime juice
1 serrano chile, minced
2 tbs finely minced white onion
1/4 cup finely chopped fresh cilantro

1. Combine first 8 ingredients. Baste chicken and grill until done.
2. Combine all lime butter ingredients. Drizzle over chicken just before serving.

This the the recipe as I recieved it, however, I changed it up a bit to suit my needs. [Yes Amy; I actually didn't follow the instructions for once in my life. I suppose that means I'm growing.]
